My brother still expects homemade mithai on Raksha Bandhan. Not store-bought. Not from a sweet shop. Homemade, made by me, handed over in a little box ideally before he’s had his morning chai.
For years I made coconut barfi. Then besan ladoo. Then one year I tried something different: chocolate barfi. It looked like mithai. It set like mithai. It had that dense, fudgy barfi texture. But it tasted like chocolate deeply, intensely, properly chocolatey. He was suspicious. Then he had two pieces before I finished my chai.
Now it’s the only thing he asks for. And it takes 30 minutes.
🍫 Why This Recipe Is Different
Most chocolate barfi recipes use condensed milk which is a fine shortcut. This version uses khoya (mawa) as the base, giving it that unmistakeable milky density that real barfi has. The chocolate works with the mawa rather than against it, creating something genuinely better than either ingredient on its own.
No condensed milk. No artificial flavouring. Just cocoa, mawa, ghee, sugar, and 25 minutes on the stove.
🛒 Ingredients (Makes ~20 pieces)
- 250g khoya / mawa (store-bought works perfectly)
- 4 tablespoons unsweetened cocoa powder, sieved
- ½ cup powdered sugar (adjust to taste)
- 2 tablespoons ghee
- ½ teaspoon cardamom powder
- 50g dark chocolate (70%+), finely chopped optional but excellent
- Slivered pistachios or edible silver leaf (varak) for garnish

📝 How to Make Chocolate Barfi
Step 1 Prep your tray. Line a small tray (roughly 20×15cm) with parchment or grease lightly with ghee. Set aside.
Step 2 Cook the mawa. Heat ghee in a heavy-bottomed pan on medium-low heat. Add crumbled khoya and stir continuously for 5–7 minutes until smooth and glossy. Don’t let it brown.
Step 3 Add cocoa and sugar. Reduce heat to low. Add sieved cocoa powder and mix until combined the mixture turns a deep, gorgeous brown. Add powdered sugar and cardamom. Stir for 3–4 more minutes until the mixture begins to pull away from the sides of the pan.
Step 4 Add dark chocolate. Remove from heat. Stir in chopped dark chocolate until fully melted and incorporated. This step is optional but adds real depth to the chocolate flavour.
Step 5 Set and cut. Pour onto the prepared tray and smooth with a spatula. Garnish with slivered pistachios. Cool at room temperature for 20 minutes, then refrigerate for at least 1 hour before cutting into squares or diamonds.
💡 Tips for Perfect Barfi Every Time
- Low and slow mawa burns fast on high heat. Keep the flame low throughout.
- Sieve the cocoa lumpy cocoa gives uneven colour and texture.
- Don’t skip the fridge the barfi needs the cold to firm up properly and cut cleanly.
- Wet knife for clean cuts run your knife under cold water before each cut for sharp, neat edges.
