Crispy Sweet Corn Pakora Recipe — The Only Monsoon Snack You Need

There’s something about July rain and a plate of pakoras that feels like the universe clicking into place.

Growing up, the moment the first monsoon showers hit, my mum would head straight to the kitchen. No announcement, no planning  just the sound of oil heating in the kadai, the smell of gram flour and cumin, and the promise of something golden and crispy in twenty minutes.

Her go-to was always sweet corn pakora. Fresh bhutta from the vegetable cart, stripped of kernels, dunked into a spiced besan batter, and fried until they blistered with tiny, crunchy edges. She’d pile them on newspaper  never a plate and set them down with green chutney and masala chai. That was dinner on rainy days. That was everything.

🌽 Why This Recipe Works

Sweet corn pakoras have a secret advantage over regular onion or potato pakoras: the corn kernels bring natural sweetness and a slight pop of texture that makes every bite interesting. The besan batter turns glass-crisp on the outside while the corn stays juicy inside  it’s that contrast that makes them completely addictive.

This recipe works equally well deep-fried (for the full monsoon experience) or air-fried (for when you want the crunch without the cleanup). I’ve tested both both are excellent.

🛒 Ingredients

  • 2 cups sweet corn kernels (fresh, frozen, or canned all work)
  • 1 cup besan (chickpea flour)
  • 2 tablespoons rice flour (for extra crunch)
  • 1 teaspoon red chilli powder
  • ½ teaspoon turmeric
  • 1 teaspoon cumin seeds
  • 1 teaspoon chaat masala
  • ½ teaspoon ajwain (carom seeds)
  • Salt to taste
  • A handful of fresh coriander, chopped
  • 1–2 green chillies, finely chopped
  • Oil for deep frying (or use an air fryer)

📝 How to Make Sweet Corn Pakora

Step 1   Make the batter. In a large bowl, combine besan, rice flour, and all the spices. Add corn, coriander, and green chillies. Mix well. Add water a little at a time  you want a thick batter that coats the corn but doesn’t drip freely. If using frozen corn, thaw and pat dry first.

Step 2   Heat the oil. In a deep kadai, heat oil to 170–180°C. To test: drop a tiny bit of batter in  it should rise to the surface within 3–4 seconds.

Step 3   Fry in batches. Drop spoonfuls of batter into the hot oil. Don’t overcrowd. Fry for 3–4 minutes, turning once, until golden and crisp. Drain on paper towels.

Air fryer method: Preheat to 200°C. Lightly brush batter portions with oil. Air fry for 12–14 minutes, shaking halfway. They’ll be crispier than you expect.

💡 Pro Tips for the Crispiest Pakoras

  • Rice flour is non-negotiable  it gives the batter that glass-crisp finish.
  • Don’t add too much water a thick batter means a crunchier crust.
  • Fry twice for restaurant-level crispiness: first fry at 160°C, rest for 5 minutes, then fry again at 180°C for 60 seconds.
  • Serve immediately pakoras go soft within 10 minutes.

🔄 Variations to Try

Cheesy corn pakora: Add 3 tablespoons of grated processed cheese to the batter. Gooey inside, crispy outside  total crowd-pleaser.

Methi corn pakora: Add a handful of fresh fenugreek leaves. The slight bitterness of methi balances the sweetness of corn beautifully.

☕ What to Serve With

Masala chai. There’s no other correct answer on a rainy July evening. Green coriander chutney and tamarind chutney both work brilliantly alongside. A squeeze of lime and a sprinkle of chaat masala right before serving takes the whole thing up a notch.

📦 Storage

Pakoras are best fresh. Reheat leftovers in an air fryer at 180°C for 5 minutes. Don’t microwave  they’ll go rubbery. You can freeze unfried batter portions and fry straight from frozen; just add 2 extra minutes.
