Instructions
Lightly zest one lemon into your mixing pitcher — those oils give the drink a brighter aroma. Halve and juice all the lemons, straining out any seeds.
In the pitcher, combine the sugar, black salt, and sea salt with about half a cup of room-temperature water. Stir until completely dissolved — starting with less water keeps the sugar from seizing once ice is added.
Stir in the roasted cumin powder and ginger juice. The ginger bridges the lemon's acidity and the cumin's earthiness for a more rounded flavor.
Pour in the remaining water and whisk briskly to aerate slightly — this makes the sarbat feel lighter and more refreshing.
