Egg Bhurji – India’s Spiciest Answer to Scrambled Eggs

🛒 What You’ll Need (Serves 2 plates, zero leftovers):

4 eggs

1 large onion, chopped

1 medium tomato, chopped

2–3 green chilies, chopped

½ tsp turmeric

1 tsp red chili powder

1½ tsp ginger-garlic paste

Salt to taste

2 tbsp oil or butter

Handful of fresh coriander, chopped

Optional: A pinch of garam masala, butter on top




🔥 How to Make It – Quick, Hot, and Bhurji-Style

1. Sizzle the Base

Heat oil or butter in a kadhai. Add onions + green chilies. Fry on high till golden.
Add ginger-garlic paste. Stir like you’re in a rush.

2. Add the Drama

Toss in tomatoes, turmeric, chili powder, and salt. Cook till tomatoes melt and the whole thing smells like a dhaba.

3. Now, Break and Scramble

Crack in the eggs. Let them sit 5 seconds. Then stir like a boss.
Don’t overmix into mush. Let it stay a little chunky, a little crispy.

4. Final Bhurji Swag

Add garam masala (if using). Top with coriander.
Turn off heat, let it rest for a minute.
