Lauki Chana Dal – A Bowl Full of Warmth and Quiet Healing

🫙 When You Just Want Food That Feels Right

There are days for big, bold flavors.
And then there are days when you just want something that holds you gently.
A bowl that feels like a soft cotton saree.
A spoonful that reminds you of your grandmother’s thali.
That’s what Lauki Chana Dal is.

No drama.
No cream.
Just lauki, chana dal, a few spices — and the kind of calm you can taste.

🛒 What You’ll Need (Serves 3–4):

1 cup chana dal, soaked for 30 mins

2 cups lauki (bottle gourd), peeled & chopped

1 medium onion, chopped (optional)

1 small tomato, chopped

1–2 green chilies, slit

½ tsp turmeric

1 tsp ginger, grated

Salt to taste

2 cups water (adjust as needed)

1 tbsp ghee or oil

For Tempering:

½ tsp cumin seeds

A pinch of hing (asafoetida)

1–2 dried red chilies

1 tsp ghee (yes, ghee again – it matters)

🍲 How to Make It – Soft, Simple, and Full of Soul

1. Pressure Cook the Core
In a cooker, add soaked chana dal, chopped lauki, turmeric, green chilies, ginger, tomato, onion (if using), and salt.
Add water. Pressure cook for 2–3 whistles. Let it sit.

2. Ghee Tempering, Always
In a small pan, heat ghee. Add cumin, hing, red chilies. Let it sizzle.
Pour this fragrant tadka into the dal.

3. Simmer & Settle
Simmer dal for a few minutes on low, so everything blends gently.
The lauki should be soft, the dal cooked but not mushy.

4. Serve with Peace
Garnish with coriander. Serve with hot rice, jeera rice, or soft phulkas.
