Not everyone loves karela, but when itβs thinly sliced and stir-fried with toasty besan, green chilies, and onions, something magical happens.
This Karela Besan Bhaji is light, healthy, and packed with texture β the bitterness mellowed out by spices, the besan adding a nutty crunch.
Perfect with roti, paratha, or even curd rice.
π What Youβll Need (Serves 2β3):
2β3 medium karela, thinly sliced (seeds removed if large)
ΒΌ cup besan (gram flour)
1 medium onion, thinly sliced
1β2 green chilies, chopped
Β½ tsp mustard seeds
Β½ tsp jeera
Pinch of hing
Β½ tsp turmeric
1 tsp red chili powder
Salt to taste
1β2 tsp oil
Optional: Β½ tsp jaggery to balance bitterness
π³ How to Make It β Crisp, Nutty & Balanced
1. Prep the Karela
Sprinkle salt on the sliced karela and set aside for 15β20 mins. Squeeze gently to reduce bitterness.
2. Toast the Besan
In a dry pan, roast besan until aromatic and slightly golden. Keep aside.
3. Temper & SautΓ©
Heat oil, add mustard, cumin, and hing. Add green chilies and onion. SautΓ© until onions are soft.
4. Cook the Karela
Add karela, turmeric, chili powder, salt. Stir-fry for 8β10 mins until tender and edges start browning.
5. Add Besan
Sprinkle roasted besan evenly. Stir well so it coats the karela. Cook on low for 2β3 mins more. Add jaggery if desired.
